When it comes to the holidays it is stressful enough to have to cook dinner without having to worry about making other extravagant meals that day as well. However, I do absolutely LOVE to sit down on Christmas morning and enjoy a nice breakfast sitting by the Christmas tree with my family. For this breakfast, I like to keep it simple and delicious. One of my favorite thing to eat as my breakfast is eggs. Eggs are a really filling food as well as very nutritious for you, they come in at only 70 calories per and they are packed with 13 essential vitamins and minerals as well as protein and antioxidants.

Eggs are great to eat for breakfast on the holidays especially because they are full of high quality protein that will keep you energized and full throughout the holiday festivities during the day and will hold you over until Dinner time. Do you ever wonder where your eggs are coming from? I know, it’s a strange thought but it’s pretty interesting to think about where they originated. It is very probable that your eggs came from an Ohio Egg Farm. Ohio Egg Farms produce around 8.7 billion eggs per year, making them the second largest egg producing state in the nation! You are getting high quality, delicious eggs when you get them from an Ohio Egg Farm.

Eating just plain old eggs in the morning can get a bit boring, trust me I know but that is why you can switch things up a bit. I personally like to make up an egg casserole for the holidays such as the Simple Breakfast Strata that I found on the Ohio Egg Farm’s website. Casseroles are perfect for the holidays because it is something I can whip up the night before and just bake in the morning for a fresh tasting, delicious breakfast. You can make your casserole with any meats or veggies that you prefer but it is definitely a great way to have a nice meal that will feed plenty of people and the recipe for this one is absolutely delicious.

Simple Breakfast Strata

Ingredients

  • 4 Slices Dense White OR Whole Grain Bread
  • 4 Eggs
  • 1/2 Cup Milk
  • 1/2 tsp. Dried Thyme OR Oregano Leaves
  • 6 Slices Canadian-Style Bacon, Chopped
  • 1/2 Cup Shredded Cheddar Cheese, 2 oz.

Instructions

  1. Place bread in single layer in greased 8-inch square baking dish.
  2. Beat eggs, milk and thyme in medium bowl until blended; pour over bread. Sprinkle with bacon. Refrigerate, covered, at least 30 minutes or as long as overnight.
  3. Heat oven to 350°F. Remove strata from refrigerator; uncover and let stand while oven heats. Bake in center of 350°F oven 30 minutes. Sprinkle with cheese. Bake until puffed, golden and firm in center, about 5 minutes longer.

Just keep in mind when preparing an egg dish be sure to pour your pre-mixed egg mixture over the top of any meats, breads, cheeses, and vegetables that you are using because this makes sure that the egg mixture soaks into the ingredients to create a moist casserole.Also be sure that you check that the internal temperature reaches 160 degrees Fahrenheit to make sure that no one in your family gets sick. If you’re looking for a quick, delicious breakfast for the holidays this year I would highly recommend making up a delicious casserole using your Ohio Egg Farm eggs, trust me – it’s delicious!
