I LOVE this recipe. This Mediterranean Sandwich is one of those super simple recipes that takes you very little time to cook but that looks really impressive and it’s really delicious.

To make it I use Pita Bread, you can buy your Pita at the store or make it at home, both options are super delicious and both are simple. I know it sounds crazy but making the actual Pita bread at home is not that difficult or time consuming. However if you are like me and prefer to stay in the lane of comfort then by all means buy it! I always try to keep a bag of pitas in my freezer and take a couple of them out when I’m in a crazy hurry and craving something warm and delicious.

However, if you don’t have Pita Bread at home (something that I really really recommend!) you can still make this delicious Mediterranean Sandwich in no time with any kind of bread because the secret is on the fillings.

The fillings of the Mediterranean Sandwich are what makes it taste exotic and well, Mediterranean. I’m using lettuce, tomato, cucumbers, thinly sliced chicken breast, and then I’m binding it all together with a cool Greek Yogurt and cucumber sauce that’s out of this world good.

And you know what? That secret sauce is super easy to make at home as well! You need 1 Part Greek Yogurt, 1/2 Part of mayonnaise, grated cucumber, some dill, a bit of lemon juice, and salt and pepper to taste.

Once you have your sauce ready, coat well your lettuce and cucumber, fill your sandwich, add the chicken, and top everything with diced tomatoes and you are all set. I know this Mediterranean Sandwich is going to become a staple in your home too.

Ingredients

  • 1 pita bread
  • ½ Tomato chopped
  • ½ Cup lettuce, chopped
  • 3 Tbsp dressing
  • 3 Thin cucumber slices

Instructions

  1. In a bowl mix the chopped lettuce with the dressing.
  2. Open the pita bread and fill it with the lettuce, cucumber, chicken breast and top with the tomato.
  3. Place in a baking pan and take to the toaster oven for 5 minutes.
  4. Serve and enjoy.
