This time of the year is definitely one of my favorites. From family time together, to the delicious food, you can’t help but be excited! When I got contacted by McCormick to do a post for them, I, of course, jumped at the offer! I use their spices very often, as I know they are high quality. Did you know that Willoughby M. McCormick and three young workers started this company in a cellar in 1889? If they have been around that long, you know they have to be good!

I’ve always loved Peppermint Bark. I love the taste of peppermint and I especially love white chocolate – it’s my favorite. I would rather have white chocolate over milk or dark chocolate any day! For today’s post I decided to switch things up a bit on the classic Peppermint Bark recipe that you can find on McCormick’s website. I hope you like my variation!

Peppermint Bark

For this simple recipe you just need a few ingredients:

First you will put your chocolate chips in a microwavable bowl on High for 1/2 to 2 minutes or until amost melted. Stir the chips every 45 seconds or so. Stir until completely melted and the mixture is smooth, then stir in the peppermint extract.

Next, either in a pan made for peppermint bark (like the one I’ve used from Good Cook) or on a large foil-lined baking sheet that is 1/4-inch thickness, spread the white chocolate. Take the green food coloring and add it drop-by-drop over the chocolate. Using a fork, or wooden skewer, swirl the food coloring through the chocolate.

Put your candy canes in a zip-top bag and crush. (I used a can of corn to crush them.) Sprinkle over the chocolate and use the back of a spatula or fork to press lightly into the chocolate.

Now refrigerate for at least 10 minutes. You can either break it into irregular pieces, or if you have a bark pan that has an awesome bottom, just break at the perforated lines.

This peppermint bark would make a great Christmas gift. Just put it in a pretty packaging and you’re good to go! Who wouldn’t love some delicious chocolate?!
