Smoky Chipotle Meat Loaf
Serves 8
INGREDIENTS:
13 Cup Barbecue Sauce
2 Canned Chipotle Chilies, Seeded
1 Tablespoon Adobo Sauce (From Canned Chilies)
2 Large Eggs
1 Tablespoon Worcestershire Sauce
1/2 Teaspoon Salt
1/4 Teaspoon Pepper
2 Cloves Garlic, Minced
1 Small Onion, Finely Minced
1 1/2 Pounds Lean Ground Beef
1 Cup Quick-Cooking Oats
3 Tablespoons KetchupDIRECTIONS:

1 Cup Quick-Cooking Oats
3 Tablespoons KetchupDIRECTIONS:
- Preheat oven to 350F. Mist a 9-by-5-inch loaf pan with cooking spray.
- Combine barbecue sauce, chipotles, adobo sauce, eggs, Worcestershire sauce, salt and pepper in a food processor and process until smooth. Transfer to a large bowl and add garlic, onion, beef and oats. Mix gently but thoroughly with your hands. Lightly pack mixture into loaf pan.
- Bake for 45 minutes. Carefully spread ketchup on top and bake for 10 minutes longer, or until an instant-read thermometer inserted into center reaches 160F. Let stand for 5 to 10 minutes before slicing.
