Cream Cheese Flans
Makes 8 Servings
Cup Granulated Sugar
1 Can (12 Fluid Ounces) Nestl Carnation Evaporated Milk
1 Can (14 Ounces) Nestl Carnation Sweetened Condensed Milk
1 Package (8 Ounces) Cream Cheese, Softened, Cut Into Chunks
5 Eggs
1. Placesugar in small, heavy-duty saucepan. Cook over medium-high heat, stirring constantly, for 3 to 4 minutes oruntil sugar is dissolved and golden. Quickly pour into eight 10-ounce custard cups;* tip cups to coat bottomsand sides with sugar syrup.
2. Placeevaporated milk, sweetened condensed milk and cream cheese in food processor orblender container; cover. Process untilsmooth. Add eggs; process until wellmixed. Pour mixture into preparedcups. Place cups in 2 large baking pans;fill pans with hot water to 1-inch depth.
3. Bakein preheated 350F oven for 30 to 40 minutes or until knife inserted nearcenters comes out clean. Remove cupsfrom water; cool cups on wire racks for 30 minutes; refrigerate for severalhours or overnight. To serve, run smallspatula around edges of cups; gently shake flans to loosen. Invert onto serving dishes to serve.
*NOTE:To make one large flan, use one 2-quart casserole dish instead of custardcups. Coat with melted sugar syrup andpour milk mixture into dish as above. Place dish in large baking pan; fill pan halfway with bot water. Bake in preheated 350F oven for 60 to 70minutes or until knife inserted in center comes out clean. Cool. Refrigerate; invert as above onto a serving platter. Slice into wedges.
