This is one of my absolute favorite recipes. I love tuna cakes. 🙂
All-AmericanTuna Cakes
Serves2
1 Can (6 Ounces) White Tuna in Water, Drained, Flaked
4 Medium Green Onions, Sliced ( Cup)
12 Saltine Crackers with Unsalted Tops, Crushed ( Cup)
1 Medium Stalk Celery, Finely Chopped ( Cup)
2 Tablespoons Reduced-Fat Mayonnaise or Salad Dressing
2 Tablespoons Chopped Fresh Parsley
1 Tablespoon Prepared Horseradish
1 Teaspoon Worcestershire Sauce
1 Egg or 2 Egg Whites, Beaten
Cup Dry Bread Crumbs
1 Tablespoon Canola Oil
Cup Fat-Free Tartar Sauce

In small bowl, mix all ingredients except bread crumbs, oil and tartar sauce. Shape tuna mixture into 2 patties; coat evenly with bread crumbs.

In 10-inch nonstick skillet, heat oil over medium heat. Cook patties in oil about 6 minutes, turning once, until golden brown. Serve with tartar sauce.
Tip:
Pair these delicious tuna cakeswith a few baby-cut carrots, cooked pea pods or a dark green romainesalad.
