1Cup Warm Water
1Teaspoon Superfine Sugar
2Teaspoons Active Dry Yeast (Not Instant Dry Yeast)
3Cups Bread Flour
1Teaspoon Salt
2Tablespoons Olive Oil
TOMATOSAUCE:
1Onion, Finely Chopped
1Tablespoon Olive Oil
1 Cups Canned Chopped Tomatoes
1Teaspoon Superfine Sugar
1-2Garlic Cloves, Finely Chopped (Optional)
SmallBunch of Basil
Saltand Ground Black Pepper
TOPPING:
22/3 Cups Sliced Mushrooms
6Vacuum-Packed Frankfurters, Thickly Sliced
4Slices of Canadian-Style Bacon, Each Cut Into 3 Pieces
2Balls Mozzarella Cheese, 4 Ounces Each, Drained and Torn Into Pieces

Pour cup warm water into a bowl, sprinkle the sugar and yeast over the top, and stir. Let stand in a warm place for 10-15 minutes, until the yeast has formed a thick frothy layer on top of the water.

Put the flour and salt in a mixing bowl, add the oil, then stir in the yeast mixture to form a soft but not sticky dough, adding the remaining warm water if needed.

Turn onto a work surface and knead well for 5 minutes, then lightly flour the bowl and put the dough back into it. Cover with oiled plastic wrap and transfer to the refrigerator to rise overnight.

Make the tomato sauce by frying the onion in the oil for 5 minutes until softened. Add the tomatoes, sugar, garlic, if using, and a few torn basil leaves. Season with a little salt and black pepper, then simmer for 10-15 minutes, until thick. Let cool and store in the refrigerator.

Next morning, knead the risen bread dough once again. Cut into four pieces and roll each piece out thinly into a rough circle about 8 inches in diameter. Divide the dough circles between two large oiled baking sheets, cover loosely with oiled plastic wrap, and let stand in a warm place for 40-50 minutes until risen.

Preheat the oven to 425F. Remove the plastic wrap, spoon tomato sauce over the bases, then divide the remaining topping ingredients between the pizzas, reserving the basil for garnish.

Bake the pizzas in the preheated oven for about 10 minutes, until golden. Sprinkle with the remaining basil leaves.
