Southwestern Biscuits
Makes About 8



2 1/4 Cups All-Purpose Flour
2 Tablespoons Granulated Sugar
1 Tablespoon Baking Powder
3 Tablespoons Butter or Margarine, Softened
1 Egg
1 Cup (8-Ounce Can) Cream-Style Corn
1/2 Cup (4-Ounce Can) Ortega Diced Green Chiles
1 Tablespoon Chopped Fresh Cilantro (Optional)

  1. Combine flour, sugar and baking powder in large bowl.  Add butter; cut in with pastry blender or 2 knives until mixture resembles coarse crumbs.
  2. Stir in egg, corn, chiles and, if desired, cilantro; combine just until mixture holds together.  Knead dough 10 times on well-floured surface.  Pat dough to 3/4-inch thickness.  Cut into 3-inch biscuits.  Place on greased baking sheet.
  3. Bake in preheated 400

  1. Thank you for sharing this recipe. I am a lover of biscuits, and am always looking for a new twist on them. This looks like a great combination of flavors, and a combination that would go perfectly on omelet night and to keep my homemade shrimp and corn chowder company in my stomach. : )
