Whole Wheat Blueberry Muffins

WholeWheat Blueberry Muffins
Makes1 Dozen
1 Cups All-Purpose Flour
1Cup Whole Wheat Flour
Cup Sugar
2Teaspoons Baking Powder
Teaspoon Baking Soda
Teaspoon Salt
1/8Teaspoon Ground Nutmeg
2Eggs
1Cup Buttermilk
Cup Canola Oil
2Cups Fresh or Frozen Blueberries
  1. In a large bowl, combine the flours, sugar, baking powder, baking soda, salt and nutmeg. In another bowl, beat the eggs, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in blueberries.
  2. Fill greased or paper-lined muffin cups three-fourths full. Bake at 375F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
