The trick is having a handful of reliable ways to put that harvest to work. Zucchini is wonderfully versatile, soaking up flavors and adapting to sweet or savory dishes with ease. Here are four approaches that will help you use up your surplus without getting bored, plus a few tips to keep things simple in the kitchen.

1. Bake It Into Breads and Muffins

Zucchini bread is a classic for a reason. Grated zucchini melts into batter and keeps baked goods incredibly moist without adding a strong vegetable flavor. Kids who claim to hate squash will happily eat a slice, none the wiser. A single large zucchini can yield enough grated squash for a loaf or two, making this one of the fastest ways to work through a pile.

Start with a basic quick bread recipe and stir in about a cup and a half of grated, lightly drained zucchini. From there, the variations are endless. Add cinnamon and walnuts for a cozy fall feel, or fold in chocolate chips for something closer to dessert. The same batter works beautifully as muffins, which freeze well and make grab-and-go breakfasts for busy weeks ahead.

If you are looking for a lighter way to use zucchini, turning it into noodles is hard to beat. Grilling is one of the most underrated ways to enjoy zucchini, and it is perfect for those last warm evenings before fall arrives. High heat brings out the squash’s natural sweetness and adds a lightly charred, smoky flavor that pairs with just about anything coming off the grill.

Slice your zucchini lengthwise into planks or cut it into thick rounds so the pieces do not fall through the grates. Brush them with olive oil, sprinkle on salt, pepper, and maybe a little garlic powder, then grill for a few minutes on each side until you see those beautiful char marks.

For the best results, grate or slice your zucchini first, then blanch it briefly in boiling water and cool it quickly in an ice bath. This step helps preserve texture and color. Pat the pieces dry, portion them into freezer bags, and lay them flat so they store neatly. 

Grated zucchini is especially handy to freeze in one-cup portions, ready to drop straight into future batches of bread or fritters. A little effort now means you get to keep enjoying your garden long after the plants have called it quits.

Making the Most of the Harvest

A zucchini glut can feel overwhelming, but it is really just an invitation to get creative. Between baking, spiralizing, grilling, and freezing, you have enough options to work through even the most enthusiastic harvest without falling into a rut.
