Despicable Me – Minion Marshmallow Pops

Despicable Me - Minion Marshmallow Pops | Optimistic Mommy

A while back I shared a tutorial for a super cute Despicable Me party cake and these adorable little Minion Marshmallow Pops are the perfect treat to add to a Despicable Me party! They are quite easy and do not require a lot of time.

Ingredients & Supplies:

  • Lollipop Sticks
  • Full Size Marshmallows
  • Yellow & Blue Candy melt – Or White Chocolate Colored Blue & Yellow
  • Black Royal Icing
  • Candy Eyeballs
  • Disposable Piping Bag Fitted With #2 Round Tip
  • Microwave Safe Bowl
  • Spoon
  • Cups Or Foam For Standing Pops To Dry
  • Parchment Paper
  • Cookie Sheet

Instructions:

Begin by covering a cookie sheet with parchment paper. Place marshmallows on the cookie sheet up right. Place in freezer for 20 minutes.

Melt blue candy melt, or white chocolate with blue coloring, in microwave safe bowl for 30 seconds. Stir the chocolate and return to the microwave for an additional 30 seconds or until melted and smooth.

Remove marshmallows from freezer and dip the bottom half of each marshmallow into the blue candy melt, using a spoon to coat. Insert a stick into the marshmallow, through the blue coating. Return marshmallows to the parchment paper, with the stick pointing up, to let the blue coating harden.

While the blue candy melt hardens, melt the yellow candy melt the same as the blue. Dip the marshmallows into the yellow coating covering approximately 2/3 of the marshmallow. Stand marshmallow pops in cup or foam to let yellow coating harden.

Using the black royal icing and the piping bag, apply a small amount of icing to create the goggle band around each minion. While icing is still wet, press an eyeball candy (or two) into the black icing. Draw a small circle of icing around each eyeball and add a curved line below the eyes for a mouth. Return to cup or foam to allow the icing to harden.

Once these sweet little minions have completely dried, place into a cute vase or jar to serve! They are so perfect for a party treat. You can also individually wrap these little guys for fun party favors and take home treats!
