In a blender or food processor fitted with the metal blade, puree the pint of strawberries with the sugar, then add the water and zap again.

Pour the mixture into a large pitcher along with the grated lemon peel and lemon juice and chill well.

When ready to serve, slowly add the club soda and top off the pitcher with ice. Stir well, pour into tall glasses, and serve garnished with the mint and some strawberries.
