Makes1 Quart

1Pint Fresh Strawberries, Hulled and Halved, Plus More WholeStrawberries For Garnish

1Cup Sugar

1Cup Water

1Tablespoon Grated Lemon Peel

1Cup Freshly Squeezed Lemon Juice (About 8 Lemons)

2Cups Cold Sparkling Water or Club Soda

Ice

MintSprigs For Garnish

  1. In a blender or food processor fitted with the metal blade, puree the pint of strawberries with the sugar, then add the water and zap again.
  2. Pour the mixture into a large pitcher along with the grated lemon peel and lemon juice and chill well.
  3. When ready to serve, slowly add the club soda and top off the pitcher with ice. Stir well, pour into tall glasses, and serve garnished with the mint and some strawberries.
