Bacon and Egg Breakfast Cups

Let’s face it… when we wake up in the morning, we need something easy for breakfast. Who likes to have to cook a gourmet while they’re half-awake? I know I sure don’t! That’s why I’m happy to bring you this simple recipe for Bacon and Eggs Breakfast Cups. They are delicious and you can still have your bacon and eggs without having to slave over the stove waiting to figure out when to flip your bacon or stir your eggs!

Bacon and Egg Breakfast Cups Recipe

Makes 6 Cups

3 Slices of Bacon
6 Eggs (I do two eggs per person)
Salt & Pepper, To Taste

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Spray a muffin pan lightly with non-stick spray.  Since your bacon will give off grease, you don’t need to spray it vigorously or anything.
  3. Slice your three slices of bacon in half, so you have six slices.  Place one half slice in each of six muffin circles, lining the edge of them.  This forms the “cup.”
  4. Next, take your eggs, break them in a mixing bowl and season them with salt and pepper and beat.
  5. Pour your seasoned eggs into the muffin cups about 1/2-3/4 of the way full.
  6. Put your breakfast cups in the oven and bake for 30-40 minutes, until done!
  7. Enjoy!

Optional: You can definitely add some other things to make your breakfast cups extra special – try shredded cheese, mushrooms, peppers – anything goes really!
