Did you know that Monday is International Coffee Day?  I had no idea, either!  There’s nothing that goes better with coffee than a good coffee cake, so I am excited to share my recipe for Maple Pumpkin Coffee Cake with you all today.

Maple Pumpkin Coffee Cake

Ingredients:
Coffee Cake –

  • 1 1/2 Cups All-Purpose Flour
  • 3/4 Cup Packed Brown Sugar
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Baking Soda
  • 2/3 Cup Buttermilk
  • 1/2 Cup Canned Pumpkin
  • 1/3 Cup Vegetable Oil
  • 1/2 Teaspoon Imitation Maple Flavor
  • 2 Eggs, Beaten

Topping –

  • 1/2 Cup Granulated Sugar
  • 1 Teaspoon Ground Cinnamon
  • 1 Teaspoon Imitation Maple Flavor

Directions:

  1. First heat your oven to 350 degrees and spray the bottom of a 9-inch pan with cooking spray.  In a bowl, mix all of the coffee cake ingredients together until the dry ingredients are moistened.
  2. In a small bowl – mix together, with a fork, the granulated sugar, cinnamon, and maple flavor for the topping.
  3. Spread half of the coffee cake batter into the pan.  Sprinkle with half of the topping, then spoon the remaining batter over top; spread out evenly.  Sprinkle with the remaining topping mixture.Maple Pumpkin Coffee Cake Recipe #CoffeeBuzz | Optimistic Mommy
  4. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.  Let cool 15 minutes, then serve warm with your favorite cup of coffee!
