Raspberry Filled Cupcake Recipe

Ingredients and Supplies:

  • 1 boxed white cake mix (and the ingredients it calls for)
  • 2 tsp raspberry extract
  • cupcake wrappers
  • cupcake pan
  • raspberry cake and cookie filling
  • sharp knife
  • prepared buttercream frosting (colored dark blue)
  • piping bag fitted with extra large star tip.

Instructions:

Preheat the oven to 350 degrees.

Prepare the cake mix according to package instructions. When batter is prepared, add 2 tsp of raspberry extract to the batter.

Line 2 full size cupcake pans with cupcake wrappers and fill 2/3 full with cake batter.

Bake in preheated oven 19-24 minutes or until they are done. Allow cupcakes to cool completely.

Once the cupcakes have cooled completely, use a sharp knife to cut into the center of each at an angle. Trim the tops to approximately 1/4″ thick.

Fill each cupcake with about 1/2 tbsp of raspberry filling and replace the top.

Top each cupcake with a generous amount of blue buttercream frosting.

Print out the cupcake toppers from our adorable printable set and cut out enough for your cupcakes. Attach the cupcake toppers to toothpicks and insert one in each cupcake.

Serve these great red, white, and blue cupcakes for your 4th of July celebration!
