If you’ve been a reader around here for a while then you probably already know that I’m always on the hunt for quick and easy dinner ideas, so when I found this Avocado Pasta I fell in love.

First, because it sounds super fancy when in reality is one of the easiest dishes you’ll prepare. Second because it’s incredibly delicious!! And third because it’s fresh and perfect for Spring.

To make the Avocado Pasta you don’t need a lot of ingredients. Actually you probably already have on hand everything you need. Avocadoes, garlic, lemon juice, salt, and pepper, some oil and pasta. Yes, that’s it. You can also add some basil and parmesan cheese if you want to really take it to the next level, but if you want to keep it low key those first 7 ingredients are more than enough.

Also, this recipe is weeknight friendly because it takes around 15 minutes to make.

My trick to have it done in that time is to start making the pasta and at the same time making the sauce. Once the pasta is ready just top it with a heaping amount of avo pesto and serve, so delicious!

And yes, you only need your food processor/blender to make the sauce. Throw everything in and pulse until creamy (usually 2 minutes) and you are all set. Sometimes I like to also add some chicken to make it more hearty, and sometimes I just make the sauce and use it as a sandwich spread, it’s also delicious as a dip (as you can see this sauce it’s pretty much a superhero!) served with some chips and maybe some spicy salsa.

Avocado Pasta

Avocado Pasta is a 15 minutes meal and perfect for weeknights! Super delicious and super easy to make + everyone loves it and raves about it!

Ingredients

  • 1 Pound pasta
  • 1 Avocado
  • ½ Cup olive oil
  • ¼ Cup basil, optional
  • ¼ Cup parmesan cheese, optional
  • 1 Clove garlic
  • Lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare pasta according to directions. Set aside.
  2. Place the rest of the ingredients in a food processor or blender and blend well until creamy.
  3. Top your pasta with the sauce and serve.

  2. I love avos, and pasta (of course) but have never tried them together. How in the world have I missed the boat for so long?

  3. I don’t have an avocado today but have everything else (and of course the CHEESE). So I’ll get avocados tomorrow when I go to the store.
