Can you believe it’s already back to school time? Tomorrow is my daughter’s official first day of kindergarten, so this is definitely a fun time. I have been making a list of healthy and fun breakfast and snack ideas – and of course, I can’t forget delicious Ohio eggs!

Microwave Coffee Cup Scramble
Ingredients
- 2 eggs
- 2 Tbsp. milk
- 2 Tbsp. shredded Cheddar cheese
- Salt and pepper
Instructions
- Coat 12-oz. microwave-safe coffee mug with cooking spray.
- Add eggs and milk; beat until blended.
- Microwave on HIGH 45 seconds; stir.
- Microwave until eggs are almost set, 30 to 45 seconds longer.
- Top with cheese; season with salt and pepper.

This is a very easy way to eat eggs. I will have to make this recipe and have with the kids for back to school. I have not time in the morning to make eggs, but this is so fast!
