Can you believe it’s already back to school time? Tomorrow is my daughter’s official first day of kindergarten, so this is definitely a fun time. I have been making a list of healthy and fun breakfast and snack ideas – and of course, I can’t forget delicious Ohio eggs!

Did you know that my home state of Ohio is the 2nd largest egg farming state in the nation? They produce more than 9 billion eggs each year – crazy! Microwave Coffee Cup Scramble

Ingredients

  • 2 eggs
  • 2 Tbsp. milk
  • 2 Tbsp. shredded Cheddar cheese
  • Salt and pepper

Instructions

  1. Coat 12-oz. microwave-safe coffee mug with cooking spray.
  2. Add eggs and milk; beat until blended.
  3. Microwave on HIGH 45 seconds; stir.
  4. Microwave until eggs are almost set, 30 to 45 seconds longer.
  5. Top with cheese; season with salt and pepper.

    This is a very easy way to eat eggs. I will have to make this recipe and have with the kids for back to school. I have not time in the morning to make eggs, but this is so fast!
