Summer Treats: Beach Blanket Cupcakes

These fun Summer treats will have your kiddos wanting to help in the kitchen!

One look at these adorable cupcakes, covered with a fondant “beach blanket” and topped with cute toppers, and your kids will be ready to have dessert! If you don’t care for fondant, you could skip the blankets and just do the toppers with regular icing. The choice is yours.

Supplies & Ingredients:

  • 2 dozen cupcakes – baked, cooled, and ready to decorate
  • 1 small batch of white fondant
  • 1 small batch of buttercream frosting
  • square cookie cutter approximately 2 1/2″ x 2 1/2″
  • gel food coloring
  • vanilla
  • toothpicks
  • small paint brush

Instructions:

Begin by covering the tops of each cupcake with a generous amount of buttercream frosting. The frosting does not have to be smooth or applied in a fancy way (although you can if you’d like). It will be mostly covered by your fondant “beach blanket” detail.

To create the fun beach blankets from fondant, roll fondant out to 1/8″-1/4″ thick. Use the square cookie cutter to cut 24 pieces, one for each cupcake.

Mix a small amount of gel food coloring with a few drops of vanilla to create a food coloring “paint”. I made my paint colors to closely match the printables. Use a small paint brush and paint the chevron design onto each fondant square and add a line around the outside of each one.

You could decorate the fondant however you choose with the paint but I thought it was fun to have them match the background of the printables. Let the food coloring paint dry before placing one on top of each cupcake.

For the printable below, make sure to print these cupcake toppers onto card stock or heavy weight paper. Cut each square out carefully and glue them to a pick to place into the top of each cupcake. I glued 2 back to back so they were pretty from both sides. Make sure to use a good quality printer or stop in and have them printed at a local print shop if your printer may not do the job.
