Three-Pepper Coleslaw
Yield: 8 Servings

1 Package (10 Ounces) Angel Hair Coleslaw Mix
1 Medium Sweet Red Pepper, Finely Chopped
1 Medium Green Pepper, Finely Chopped
1 to 2 Jalapeno Peppers, Seeded and Finely Chopped
3 Green Onions, Chopped
¼ Cup White Wine Vinegar
2 Tablespoons Lime Juice
2 Teaspoons Canola Oil
1 Teaspoon Sugar
½ Teaspoon Salt
¼ Teaspoon Pepper

  1. Place the first five ingredients in a large serving bowl.  In a small bowl, whisk the remaining ingredients.  Pour over coleslaw mixture; toss to coat.  Cover and refrigerate for at least 30 minutes before serving.
