Understanding Whipped Cream Peaks

If you have tasted real homemade whipped cream before, you’d agree that it is much better than the commercial version. Homemade whipped cream is not limited to creativity and personal taste. The creators have the freedom to pick the best ingredients and get creative with their recipes. Not to mention that homemade whipped cream does not come with additives or preservatives.

As you mix the ingredients to make your whipped cream, you will reach certain peaks. You may be asking yourself, what are peaks, anyway?

After whipping your cream for a certain period of time, the shape will be different. There are soft peaks, medium peaks, and stiff peaks.

Here is how you can differentiate the peak types.

Soft Peaks

Its shape and texture are like melted ice cream but still can retain its larger volume. It has a niche floppy texture which you can use for milkshake floats, juice floats, or any kind of desserts.

The foamy and airy characteristic is still in the thinner phase. It is smooth so that leaves marks in the mixture.  The soft peaks can be noticed easily when you lift up your beaters. The mixture will melt back in a really short time.

Medium Peaks

If you have ever tasted classic pumpkin pie before, the cream that you notice on top of it does resemble the medium peaks of the whipped cream. At this level, you will notice more significant swirl marks. And the structure is firmer than the soft peaks. It is easy to test if you reach the medium peaks. When you lift up your beaters, the peaks will form, but not firm enough to maintain their shape so that they will curl down slightly.

Stiff Peaks

Stiff peaks have the firmest characteristic amongst all peaks of whipped cream. You will notice it from the rippled texture that you get after lifting your beaters. With this level of peaks, you are able to use it for icing a cake. There’s a good reason to stop mixing once you reach this level of peaks. When you mix the mixture too long, it will turn to butter.

The stiff peaks of whipped cream come with unique characteristics of smoothness and glossiness. As you lift your beaters, it will hold the shape firmly. The other way to make sure the firmness of the stiff peaks is to turn your bowl over. If nothing drops, then you are golden! But do it with your own risks since it will slide if it is not firm enough.
