Cheesy BBQ Chicken Pizza Featuring Velveeta | Optimistic Mommy

On a recent shopping trip to Walmart, I came across a great, famous product.  Velveeta… I am sure that most of us have tried it, most likely in the yummy queso dip that is so famous.  I know a lot of people make it for parties; I’m sure you’ll find it if you go to a fourth of July bash!  If you comment and say you have never tried it, two things will happen… I will 1. be extremely surprised and, 2. tell you to go make some!  It is so delicious!  There’s a lot of great additions you can put in it, as well, to jazz it up – bacon, jalapenos, hamburger – the possibilities are endless!

There’s lots of other great dishes you can make with Velveeta, as well.  Their website has some great ideas.  Today I want to share one I came up with all on my own!  It’s Cheesy BBQ Chicken Pizza!  My husband and daughter helped me make it and we had a great time eating it!  It is absolutely delicious!

To make this pizza you only need a few items:

  • Block of Velveeta (I used about 1/4 of the block)
  • Refrigerated Pizza Crust (Or you can make your own from scratch)
  • BBQ Sauce (I used my family’s favorite, which is Sweet Baby Ray’s)
  • Frozen Chicken Breasts (I used Tyson’s Smoky Steakhouse Seasoned to add extra flavor)

You can cook the chicken however you would like, but to make it easy on me, I put it in the slow cooker on low and let it cook during the day!  This makes it easy for you!  If you wish to not use a slow cooker, just put it in the oven according to the directions and cook it before getting your pizza crust ready.

Next you preheat your oven to whatever temperature your refrigerated pizza crust says (mine said 400 degrees).  Just spread it out on a cookie sheet and begin by spreading your barbecue sauce.  Riley, my daughter, has been big into helping in the kitchen (and she’s only two!) so she helped with this and had a great time… of course she ate some of the sauce along the way, too!

Next you will just shred your chicken.  I shredded mine with two forks right in the crock pot – no sense in dirtying anymore dishes!  You then just spread it all over the pizza crust!

Doesn’t that look delicious already?!  Let’s make it even better… by adding the Velveeta!  We first tried melting some in the microwave and then pouring it over the pizza.  That didn’t work out so well.  So we then decided to just dice the Velveeta up in cubes and put it on that way – worked out so much better!    You just put as much, or as little, Velveeta as you would like!  Here is Miles, my husband, as we’re about to put it in the oven!  He’s pretty excited, can you tell?

We had ours in the oven for about 17 minutes.  It made it all nice and cheesy and delicious!  This has definitely become one of our favorites and will be made quite often!  You can always adapt this recipe to cook on a grill, as well and it doesn’t need to be an expensive one, you can choose the best gas grills under $500 to make the most delicious cheesy pizza ever!  Also, you can add any other toppings that you and your family like – the possibilities are endless!

Cheesy BBQ Chicken Pizza

Yield: 1 Pizza

Ingredients

  • Velveeta
  • Frozen Chicken Breasts
  • BBQ Sauce
  • Refrigerated Pizza Crust

Instructions

  1. Put your frozen chicken breasts (I used two) in a slow cooker in the morning with about a cup of water and put on low so they can cook all day. If you do not want to use the slow cooker, just follow the directions on the package and cook them in the oven before putting your pizza together.
  2. Preheat your oven to the refrigerated pizza dough directions and roll your pizza crust out on a cookie sheet.
  3. Spread your BBQ sauce all over the crust.
  4. Shred your chicken however way you like (I just used two forks and shredded it right in the crock pot - less clean up that way!) and spread on top of the sauce and crust.
  5. Cube your Velveeta and sprinkle over your pizza. Use as much, or as little, as you want!
  6. Bake your pizza for about 17 minutes or until cheesy is bubbly.
  7. Enjoy!

  6. We love chicken pizza and I never thought of using canned pizza dough to make our own homemade pizza. This sounds like a great combo. If you don’t like cooking chicken you can buy the precut chicken that just needs to be heated up, I buy the John Soules chicken all the time.
